In Search of Birthday Cakes: Yesterfood's Favorite Finds

After a recent check of my calendar, I realized that I get to make several birthday cakes in the next few weeks. These are fun adventures for me, but I needed some inspiration. I knew I wanted from-scratch layers cakes, but what kinds? I found some beautiful cakes from a few of my favorite bakers. I haven't made any final decisions, but I've narrowed it down to the following lovely creations- my favorite finds. Since none of these gorgeous cakes are mine (darn it), please pin from the original source.

Chipotle Deviled Eggs


These are hot and spicy, cool and creamy, all at the same time! 

Chipotle Deviled Eggs  Print Recipe
Makes 12 eggs (24 halves)

12 hard boiled eggs, peeled

1/2 cup real mayonnaise
1 tablespoon adobo sauce from canned chipotles
1 teaspoon finely minced canned chipotles in adobo sauce (scrape seeds out of pepper first, if desired)
1/8 teaspoon chili powder
1/8 teaspoon cumin
1/8 teaspoon garlic powder
salt to taste (I didn't add any; the mayo added plenty of salt for me)
pinch of sugar
smoked or regular paprika (for garnish)


Prepare chipotle mayonnaise: combine mayo, chipotles, sauce, and the rest of the seasonings (except paprika) in a small bowl and mix well. Taste and correct for seasonings. At this point, you can add more chipotle and/or more adobo sauce for a higher level of heat, if you like.


Chipotle mayonnaise adds extra flavor and a little spiciness to sandwiches...
it pairs especially well with avocado

Slice eggs lengthwise. Place the whites on the serving plate. Put the yolks (and any whites that didn't survive the peeling process) in a medium bowl and mash them with a fork until fairly smooth. Add the mayo mixture to the yolks- start with about half of the mayo and continue adding until you reach your desired consistency. Some people like a little more or a little less mayo than others. (If you have any leftover chipotle mayo, it is fantastic on sandwiches and burgers!).


With a spoon or piping bag, fill the whites with the yolk mixture. Refrigerate, covered, until time to serve. Right before serving, sprinkle the eggs (the filling part only- it will discolor the whites) lightly with paprika.



Chipotle Deviled Eggs may have been taken to some of these fun parties!

Fresh Basil Pesto


I have been seeing a few pesto recipes being posted here and there, and no wonder- this is the time of year for fresh basil everything. My pesto has a little less oil and cheese than some recipes I have seen; I think it lets the bright flavor of the basil show through. 

Fresh Basil Pesto is delicious on pasta, breads, pizza, veggies, meats, and more. It's ready in almost no time- a few seconds in the food processor, and you're done!




Fresh Basil Pesto

Makes about 1 cup

2 cups fresh basil leaves (packed)
5 tablespoons extra virgin olive oil
1/4 cup grated parmesan cheese
2 tablespoons pine nuts, lightly toasted
2 teaspoons minced garlic (or to taste)
1/4 teaspoon salt (or to taste)

Chop the basil leaves in your food processor for a few seconds. Add the rest of the ingredients and process, checking frequently and scraping the sides if necessary, until the pesto is the desired texture. Mine took about 2 minutes, but my processor is old and tired. :) Your time may vary.

Pesto will keep in the refrigerator for several weeks. It may separate a little, 
but just give it a stir before using.
