Supreme Pizza Pasta
Makes about 3.5 quartsFor the pasta:
1 package (12 oz.) whole grain pasta
1 medium red onion, sliced and then halved
1 large green bell pepper, diced
1 tablespoon olive oil
10 oz. cherry tomatoes, halved
8 oz. baby bocconcini
1 medium red onion, sliced and then halved into half circles, separated
1 large green bell pepper, diced
4 oz. cooked, crumbled sausage (I used turkey)
2 oz. pepperoni, cut into strips (I used turkey)
1 (2.25 oz.) sliced black olives, drained
shredded parmesan cheese for serving
For the dressing:
1/2 cup olive oil
1/2 cup red wine vinegar
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon dried parsley
Directions:
1. Cook pasta according to directions on package. Drain and rinse in cold water until cool. Drain well, then place in a large serving bowl.
2. While pasta cooks, saute the onion and bell pepper in 1 tablespoon olive oil until crisp tender. Toss into pasta, then add tomatoes, bocconcini, sausage, pepperoni, and olives.
3. In a medium bowl, whisk together all the dressing ingredients until well-combined. Pour over pasta mixture and mix well. Sprinkle with parmesan cheese. Serve at room temperature or cold. Refrigerate leftovers.
We preferred the pasta at room temperature. The next day, we warmed individual servings slightly in the microwave.
