Dark Chocolate Chewies


I am excited to be baking with a baking group known as Fill The Cookie Jar. Every month we are assigned a different theme to follow, and this month's theme is Halloween!

These dark chocolate cookies will put a spell on you. They'll remind you a little of a brownie in cookie form- a nice, thin, crackly crust forms on the outside of a dark, chewy middle. Scary good! 

Dark Chocolate Chewies
Makes about 24

1 and 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup unsalted butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/3 cup plus 1 tablespoon dark chocolate unsweetened baking cocoa (sift before measuring)
1 egg
1/2 teaspoon vanilla

Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper; set aside.

Combine flour, baking soda, and salt into a medium bowl. Set aside. In a small bowl, beat egg and vanilla together. Set aside.

Put brown sugar and butter in a large bowl. Beat with a mixer at medium speed until light and fluffy, scraping sides frequently, about 3 minutes. While mixer is running, gradually pour in granulated sugar, and beat well. On low, add cocoa and egg mixture, and beat until well combined. Gradually add flour mixture, and beat until well combined, scraping sides frequently.

Roll level tablespoons of dough into balls. Place balls on cookie sheets, about 1 and 1/2" apart. Bake for 10 to 11 minutes, turning pans half way through. Do not overcook- cookies will look puffed and may not look completely "done", but they will set up as they cool. Cool the cookies on the baking sheet for about 5 minutes before transferring them to a cooling rack. Let cool completely.

  7. I agree with you - sometimes a cookie just needs to be left alone! This one is a perfect candidate for that! I picture them tucked alongside Halloween decorated ones on a big platter. I think they'd be the first ones gone!

  28. It looks like nobody tried to make these cookie yet, as all comments were in regard to the picture. I'm not a novice baker, but these turned out disastrous. Very disappointing. They came out as cracked balls, the dough didn't melt into shape of cookie. Are you sure, 1 egg is sufficient? Not sure why it didn't turn out for me, used all ingredients as stated above. Any thoughts?

    1. Oh, Lena, that has got to be so disappointing! :( As many times as I have made these, I've never run into that. I'm sure you triple checked the exact measurements of all your ingredients, especially that you used enough real butter and that your soda wasn't old. And since you're not a beginner, I know you spooned the flour and cocoa lightly into the measuring cup, not scooped it or packed it before leveling. Those are the only things I could think of- I truly hate that they didn't turn out for you!

  30. These are excellent cookies! They taste like Oreo brownies in a cookie form. They are very easy to put together. Instead of rolling my cookies into balls, I just used a cookie scoop. Thank you so much for a recipe that is going into my file.
