These are hearty little cookies that give you a bit of fiber, protein, and some healthy fat. They have a warm, comforting flavor that may remind you of a cross between an oatmeal raisin cookie and a bite of soft granola. With the oats, whole wheat flour, and wheat germ, they are deliciously chewy and take a while to eat; I liked that I couldn't just pop one in my mouth, one right after the other.
These are not ooey-gooey or decadent or overly sweet, and they're not meant to be. Energy Cookies are tasty, filling and satisfying, and may be just what you need to give yourself or your kids a healthy treat.
These cookies travel well, so take them along on your summer adventures!
Makes 24, 2.5" cookies
3/4 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup toasted wheat germ
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup coconut oil
1/4 cup unsalted butter
1/2 cup brown sugar
3 tablespoons honey
3 tablespoons smooth peanut butter
1 egg
3/4 teaspoon vanilla extract
1 cup rolled ("old fashioned") oats
1/2 cup raisins
1/2 cup dark chocolate chips
1/2 cup chopped pecans
1. Combine the flour, wheat germ, baking soda, salt, and cinnamon in a large bowl. Stir to mix well. Set aside.
2. In another large bowl, cream together the coconut oil, butter, brown sugar, honey, and peanut butter until very smooth. Blend in the egg and vanilla.
3. Stir the flour mixture into the creamed mixture until well-combined. Stir in the oats, raisins, chocolate chips, and nuts. The batter is very thick at this point and will give your arms a healthy workout. ;)
4. Cover and refrigerate for an hour.
5. Preheat oven to 350 degrees and line cookie sheets with parchment paper. Using an 1/8 cup (2 tablespoons) scoop, shape chilled dough into balls and flatten slightly. Bake on prepared cookie sheets for 10 to 11 minutes, until cookies are just barely starting to brown. They will be soft to the touch. Do not over-bake. Cool on cookie sheets for 5 minutes, then transfer cookies to wire rack to cool completely.
Store at room temperature in an airtight container. These are actually better the next day, and keep well for several days.

Those sound really good, Joy! Anytime you can combine "cookie" with "good for you" ingredients, it is a win. I loved how you said that "they take a while to eat; I liked that I couldn't just pop one in my mouth, one right after the other." Isn't that the truth about wanting to keep popping cookies in our mouths once we get started!
ReplyDeleteIt's certainly true for me! :) I felt kind of funny writing about it like that, but it really was something I liked about these. They require a little mindfulness and chewing- again, a good thing. I'm so glad you came by, Linda- thank you!
DeleteThese look so good! Now all I need is the energy to make them!
ReplyDeleteJenna
I hadn't thought of that, Jenna! Maybe I should send a couple over to get you started? ;) Thanks for the smile this morning! :)
DeleteJoy these are great and won't hurt my new healthy lifestyle. I will have to pin these for later.
ReplyDeleteThank you, Dawn! Having these for a snack made me feel pretty good about what I was eating. I looove your date coconut cookies!
DeleteI've been pinning..Have a great day!
ReplyDeleteLynn, thank you for stopping by, and for pinning! You are a bona-fide bright spot in my day. :)
DeleteHi Joy, Seems as though after the holidays we are looking for more healthy treats. This recipe sounds delicious. I haven't tried using coconut oil in my cookies yet, I'm going to try it.
ReplyDeleteJoanne, I thought the coconut oil did just fine. I think I would like to experiment with using all coconut oil, but use the unprocessed coconut oil that still has the aroma and flavor to it. I'm thinking that might be pretty awesome. ;) Thank you for coming by, and for sharing your pretty Walnut and Chocolate Chip Oatmeal Cookies! :)
DeleteOh WOW! These look like a perfect fit for our lunchboxes. Can't wait to make em!
ReplyDeleteI'm so glad you like them, LB! If you make them, I hope you enjoy them as much as we do! Like you said on your (amazing) Elvis Bread, don't overcook 'em! ;) Thank you for the visit!
DeleteJoy, I see our minds were on similar paths for this month! I do love everything you packed into your healthy cookie! I wish I would have thought to add some peanut butter to mine! In hopes of keeping our "healthy" cookies going for a while, your Winter Energy Cookies are up next on my baking list!
ReplyDeleteYes, we love that dark chocolate, oats, and honey! ;) If you try these, I hope you like them as much as we do! Hope you are staying warm! :)
DeleteJoy these sound wonderful... and I like the addition of the wheat germ. Great cookie for this month's theme
ReplyDeleteThank you, Marlys- I loved your granola cookies, too! Great theme this month! :)
DeleteYum! My go-to recipe when I splurge and bake cookies is pretty similar but my kids don't love the texture. I'll have to give yours a try and see if they like it better.
ReplyDeleteI know they must have loved your yummy Double Chocolate Chip Cookies! Thank you for coming by, and happy weekend! :)
DeleteYum…these are what I call "the new healthy" cookie. Winter energy is what I need right now…blessings!
ReplyDeleteYes, I feel a little bit like hibernating this time of year! Blessings to you, too, sweet friend! :)
DeleteI just love cooler weather, so I can bake some of your terrific recipes :-) Kinda hard to crank up the oven down here in S GA in the summer time so we grill or fry a lot. I think I need a "Bake Day" then freeze them and eat 'em in the summer time!
ReplyDeleteJoAnne, being in Texas, I can sympathize on the hot weather. It IS nice when the temps get low enough to bake! I like your idea of bake-n-freeze!! Brilliant. ♥
DeleteThis Winter engery cookies looks delicious Joy, love to try it.
ReplyDeleteWe really enjoyed them, Swathi- thank you! More pecan recipes for you and I! ;)

ReplyDeleteOh, thanks, Jamie! I need to straighten out my blog reader, too- it's needs to be a little more organized. OK, a lot more organized. ;) Thank you for coming by, and for pinninng! Happy Weekend! :)

ReplyDeleteThanks so much, Pamela! If you try them I hope you enjoy them as much as we do! :) Thank you for visiting!
DeleteWhat could I substitute for the peanut butter? My son is allergic. :) Deb
ReplyDeleteHi, Deb, I’m really not sure...I haven’t tried anything else as a substitution. If he is allergic to peanuts only, could you sub in a different nut butter? I think it fit were me, I would try substituting a very ripe small banana, mashed well. Again, I have not tried this, but it’s something I might try. I was considering adding a mashed banana to these the next time I made them, anyway. :) If you try it, please let us know! I hope you’re enjoying your weekend!
DeleteI love cookies! I love to bake them and unfortunately eat them. Must try these and I love the cookies for a month!

ReplyDeleteThese babies are packed full of good things! Dark chocolate, oats, pecans. With all of the good stuff here I wouldn't even feel guilty about having a couple for breakfast. The AM is when I can use energy the most, after all ;)
ReplyDeleteThank you for sharing, Joy. Hope you have a lovely week.
Oh, Joy, these look good! I love a cookie you can really sink your teeth into and munch for awhile! The fact that they taste better the next day and are good for several days put them on my "bake soon" list for my son's next college care package. Thanks!
ReplyDeletep.s. I really like your top photo. The background textile has just the right colors to bring out the variations of colors in the cookies. I find brown cookie hard to photograph in an appetizing way. You have captured delicious! :)
Wendy, I hadn't thought of it, but these really would be good cookies for mailing! If you send some to your son, I hope he enjoys them. Your comment about my photo just made my day- thank you so much!
DeleteJoy these look great! I love all the goodness that is packed into them :-) I will be pinning this and making them tomorrow! :-)
