Spinach Alfredo Crockpot Lasagna

This lasagna is one of the best I've had.
It's easy to put together, and my family loved the spinach-alfredo combination.

Spinach Alfredo Crock Pot Lasagna
Printable Recipe

1/2 pound lean ground beef
1/2 pound ground sausage
1 medium onion, chopped
2 garlic cloves, minced
1 jar (24 oz.) spaghetti sauce
1 carton (15 oz.) ricotta cheese
1/2 cup grated parmesan cheese
2 heaping tablespoons minced fresh parsley
1/4 teaspoon ground black pepper
1 pkg (8 oz.) no-cook lasagna noodles
8 cups (32 oz.) shredded part-skim mozzarella cheese
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 jar (15 oz.) Alfredo sauce

Come home to a crock pot of delicious lasagna

1. In a large skillet, cook the beef, sausage, onion, and garlic until meat is no longer pink. Drain. Stir in spaghetti sauce.
2. In a small bowl, combine ricotta cheese, parmesan cheese, parsley and pepper. Set aside.
3. Spread 1 cup meat sauce in the bottom of a 6 qt. crock pot. Arrange four noodles over sauce, breaking to fit evenly. Spread 1/2 of ricotta mixture evenly over noodles. Layer with 2 cups mozzarella and then half of remaining meat mixture.
4. Top with four noodles, spinach, Alfredo sauce, 2 cups mozzarella cheese, 4 noodles and remaining ricotta mixture. Layer 2 more cups mozzarella, the rest of the meat mixture, and remaining 2 cups mozzarella.
5. Cook on low for about 5 hours or until noodles are tender.
6. Turn crock pot off and remove lid. Let lasagna sit for 20 to 30 minutes before serving to firm up.

  2. Good Evening Joy, I love making Lasagne, but I have never made it in a slow cooker before, I have always used the oven. I am certainly going to try your method next time I make a Lasagne as I could put all the ingredients in the slow cooker, then get on with other things and not worry about it for 5 hours..... fabulous.
    Best Wishes

    1. Daphne, I had tried making lasagna in the slow cooker before, but it always came out too “soupy”. This wasn’t soupy at all, so I was happy with the way it turned out! :) Yes, letting it do all the work while you do other things for 5 hours is won-der-ful! ;)

    1. Thank you, Dawn! I have tried a couple of different recipes for making lasagna in the crockpot, and they tended to be soupy. I was really happy with the way this one turned out- no soup! ;) If you try it, I hope you and your family enjoy it! Thank you for coming by!

  11. A crockpot full of something delicious makes the house smell better than any Glade plug-in could hope too! :) This lasagna looks delicious, Joy! I find that good crockpot recipes are not so easy to find. They take a lot of trial and error for me. Thank you for doing the trial part on this one! We love lasagna and we love spinach so this will be dinner at our house soon!

  23. This looks great. I use my crock pot a lot, but for some reason pasta in it always intimidates me a little, I am always worried I will get it too mushy. I will have to try this, my boys love lasagna. If you have not shared yet at Bacon Time, I would love for you to join our linky, it's up now :)

  24. Oh yum, my husband is up for me trying this one. I have a spinach lasagna recipe that I make, but the spinach is in place of the meat and it is with red pasta sauce, oh, and cooked in the oven. He says we will have to try this next month. Can't this money as we have already had our lasagna for the month (it does get expensive)
I would love if you could stop by and share on my weekly recipe linky, Kids and a Mom in the Kitchen. I am always looking for new recipes to Pin and to try with my children.

  38. Attention all you commenters who want to try this recipe! I made it yesterday and it is FABULOUS!!!! No runny mess like lots of others - this one is firm and tastes wonderful! The prep is easy - meat sauce and cheese mixtures - then just layer away - and wait politely for the results! I paired it with French bread smothered in garlic butter and it was divine! Go for it! - and thanks, Joy!
